Maison du Chancelier’s 2022 Bourgogne Hautes-Côtes de Beaune ‘Les Chevrières’ is a distinguished white Burgundy crafted from 100% Chardonnay grapes. The ‘Les Chevrières’ climat, located in Savigny-Lès-Beaune, features high-altitude, east-facing slopes with shallow limestone soils, imparting finesse and length to the wine. The 10-year-old vines are traditionally managed with dense planting and Guyot simple pruning. Hand-harvested at optimal ripeness, the grapes undergo meticulous sorting and are vinified without sulfur in oak barrels. The wine matures on its lees for approximately 12 months in 228L and 350L oak barrels, enhancing its complexity. This Bourgogne Hautes-Côtes de Beaune exhibits delicate aromas of hazelnut and almond, with a lively attack and fine palate, offering flavors of white-fleshed fruits enveloped in a pleasant toastiness. With a limited production of 300 bottles, ‘Les Chevrières’ exemplifies the elegance and precision characteristic of the Hautes-Côtes de Beaune appellation.
